Another recipe for my stuffing mad family.

    Take some leftover bread crusts, about 4 slices - any type of bread is ok, and reduce to breadcrumbs in the food processor. Add the juice and zest of one lemon, the chopped fresh rosemary, the beaten egg, the chopped olives, a crushed clove of garlic, ground black pepper and 1/2 tablespoon of olive oil. Don't add any salt - there is enough in the olives. If your chicken comes with giblets, then you can fry the liver in a little oil, chop it up and add that too. Mix it all together and stuff and roast the chicken by your preferred method.
