Got to have a good stuffing with your turkey! I've always made at least one stuffing and it has to be chestnut.

Method

    1. Melt the butter in a large frying pan and cook the onion, bacon and chopped turkey liver for 10 minutes or so until the onion is transparent and everything tinged gold at the edges.
    2. Tip the contents of the pan into a large mixing bowl and add all the remaining ingredients. Season and mix very thoroughly.
    3. Either shape into balls the size of golf balls or a bit smaller or place all the mixture into a shallow oven proof dish. Cook for about 30-40 minutes until cooked and golden.

Chef's Tips

I don't stuff the turkey as I'm always concerned the bird will not cook thoroughly. I put an onion and a quartered lemon into the cavity to maintain a moist but fragrant inside to the bird. Plus I like the stuffing baked and crispy on the outside and nice and succulent underneath.
