Ingredients
- 2 tbsp olive oil
- 2lb Lean Minced Beef
- 2 onion. finely chopped
- 2 cloves garlic- peeled and finely chopped
- 1 celery stick. finely chopped
- 2 medium chilli. finely chopped
- 1 bay leaf
- 1 tbsp Ground cumin
- 1 tbsp Ground Coriander
- 200g baked beans
- 10 mushrooms sliced
- 1 tbsp Paprika powder
- 2 tsp cayenne pepper
- 1 tsp Ground Cinnamon
- 1 tsp ground black pepper
- 1 tbsp tomato puree
- 400g Tin of Chopped Tomatoes
- 250ml beef stock
- 400g kidney beans canned
- salt
- basmati or short grain white rice
- 2 naan breads

heat large pan until its hot then add the olive oil and the mince, fry until browned then remove it from the pan and set it aside.
add the onions,garlic,celery,chillies,mushrooms and sweat for 5-7 minutes until golden, add all the spices and fry for one minute,return the beef to the pan and stir to combine,add the tomatoe puree,beans,stock and bring to the boil, reduce the heat and simmer for 1-1 1/2 hours until very tender, serve with rice and naan.
note- i often cook this recipe in a pan for the first half an hour then transfer to a large slow cooker on low for the rest of the day whilst im at work.
