- 1 onion. finely chopped
- 100g Carrots Peeled and Chopped
- 2 sticks Celery. diced
- 2 cloves garlic
- 500g Extra Lean Minced Beef
- 350g penne pasta
- 2 x 400g canned tomatoes. chopped
- 1 Tbsp tomato puree
- 1 Tsp Worcestershire sauce
- 1 bay leaf
- 40g Low Fat Margarine
- 40g plain flour
- 400ml Skimmed Milk
- 50g parmesan cheese

Pre heat fan oven to 160 C. Mist pan with low fat spray and add onion, fry for 5 mins until starting to soften, then add the carrot, celery and garlic and fry, stirring frequently for further 5 mins. Add the mince and fry stirring to break up any lumps for 10 mins or until browned and any liquid has evaporated. Meanwhile bring pan of water to boil add penne and boil gently for 8 mins or until tender. Drain, set aside. Stir the chopped tomatos, worcestershire sauce and bay leaf into mince. Bring to gentle boil, reduce heat and simmer for 20 mins. Meanwhile melt low fat spread in pan, stir in flour. Cook stiring ocasionally over low heat for 2 mins, slowly whisk in milk and cook for 15-20 mins until thickened. Remove from heat and season. Remove bay leaf from bologneses, season and stir in pasta. Transfer to large oven proof dish and pour over white sauce, sprinkle over parmesan and bake for 20 mins until golden and bubbling.
