- 3 fresh salmon fillets
- 2tbsp runny honey
- 1tbsp grain mustard
- 2cm grated fresh ginger
- juice of 2 limes
- zest of 1 lime
- 2 knobs butter
- 250g fine egg noodles
- broccoli florets

In a bowl, mix together the honey, mustard, ginger, lime juice and zest. Put the salmon fillets in the bowl to marinade in the mixture for at least 15 mins.
Boil a pan of water to steam the broccoli and cook the noodles (according to the packet).
Heat a knob of butter in a frying pan until slightly bubbling. Remove the salmon with a slotted spoon from the bowl and place in the frying pan. Put the heat on fairly high and the salmon should take approx 3-4mins each side to cook. Once cooked, put aside.
Add the other knob of butter to the pan on a high heat. Let it melt and bubble and pour in the remaining marinade from the bowl. Bring to boil and reduce for approx 1 min.
Place the salmon on the noodles and tip over the marinade.
Serve this with the steamed broccoli florets.
