Ingredients
- 1 oil spray
- 1 Medium Onion finely chopped
- 2 cups button mushrooms. finely sliced
- 2 clove garlic. crushed
- 500g frozen spinach. thawed. drained. chopped
- 450g low-fat ricotta cheese
- 120g reduced fat mozzarella cheese
- 1 egg white
- 1/8 tsp nutmeg
- 400g (1 ยฝ cups) tomato based pasta sauce
- 400g canned chopped tomatoes
- 250g lasagne sheets (approx. 9 sheets)
- 2 Tbsp grated Parmesan cheese

1. Preheat oven to 180*C. Spray a 28cm x 18cm, deep oven-proof baking dish with oil and set aside.
2. Spray a large non-stick frying pan with oil and place over medium-high heat. Add onion, mushroom and garlic and cook, stirring for 10 minutes or until light golden brown and soft. Add spinach and cook until all liquid has evaporated. Remove from heat and transfer to a large bowl.
3. As mixture is cooking, add ricotta, mozzarella, egg white and nutmeg. Season well with salt and pepper and stir to combine.
4. Combine tomato pasta sauce and chopped tomatoes in a separate bowl. Spoon 3/4 cup tomato mixture into bottom of prepared baking dish. Top with 3 uncooked lasagne sheets then top with another 3/4 cup tomato mixture and half of the cheese mixture. Spread the cheese mixture carefully to create an even layer.
5. Repeat the same process with remaining ingredients to make another 2 layers. The last layer should be topped with remaining tomato mixture. Sprinkle with parmesan cheese and bake for 40 minutes or until golden brown and cheese is bubbling. Allow lasange to stand 10 minutes before slicing into 6 pieces and serving.

NOTES:
- Good for lunches, and freezes fine
- If you can't get reduced fat mozzarella, it becomes 5.5 points per serve
