Ingredients

- 1 Medium Onion finely chopped
- 2 celery sticks. trimmed. finely chopped
- 2 cloves garlic. crushed
- 1 whole red chilli. desseded. finely chopped
- 500g lean beef mince
- 1 tsp chilli powder (or to taste... I use ΒΌ - ΓΒ½ tsp)
- 2 tsp ground cumin seed
- 1 tsp dried oregano
- 800g canned chopped tomatoes
- 1 whole beef stock cube. dissolved in 1 cup hot water
- 1 cup canned tomato puree
- 800g canned drained red kidney beans. rinsed

Good mince mixture to use for nachos, tacos etc

1. Spray a large pan with oil and place over medium-high heat. Add onion, celery, garlic and chilli. Cook, stirring, for 5 minutes or until tender. Increase heat to high. Add mince and cook, stirring to break up any lumps, for 5 minutes or until brown.
2. Add chilli powder, cumin and oregano to the mince. Taste and season with salt and pepper. Add tomatoes, stock, puree and beans. Bring mixture to the boil. Reduce heat to low and simmer, partially covered, for 30 minutes.

NOTES:
- This mince can be made in advance. It will keep in an airtight container in the fridge for 2 - 3 days, and actually improves in flavour with age.
- It is suitable to freeze for up to 3 months.
