    Fry onions till golden adding seasoning, add veggies except beets and cook till starting to break down. Place sausages and beets in the pan, add some water (or wine if you like, rose would be good here), oxo and paprika. Cook until sausages are done, stirring very little. Break up sausages. No need to thicken due to potato starch.

    Add chopped herbs at the end and serve with bread and butter.

Chef's Tips

Peeling a munchkin will be problematic. If I ever get around to it, I'll do a how-to vid and post a link... The ridges make it a real pest but there's a simple way around it. Take a large knife, split it north to south, remove seeds (they're scrummy and rodents love them too). Then cut off half-moon shapes following the indents. You can then peel each half-moon and chop very easily!

For a veggie/vegan alternative just leave out the sausages and use a veg oxo instead. Lightly toast the pumpkin seeds and sprinkle casserole with these to serve.

The herbs I stirred in at the end were parsley and a touch of thyme, but other non-woody herbs would work as well, like coriander or chive or wild ransom (reduce the garlic to 2 cloves if so though).

This would be scrummy with some smoked sausage like chorizo added with the sausages.
