- 4 large courgettes. trimmed
- 2 tbsp olive oil
- sea salt
- black pepper
- 200g (7oz) good quality prosciutto. thinly sliced
- 2 tbsp pine nuts. toasted
- handful of flat-leaf parsley. leaves picked
- 2 tbsp red wine vinegar
- 1-2 tbsp blossom honey
- juice of Β½ lemon
- 6 tbsp extra virgin olive oil
- few thyme sprigs. leaves picked

Make the sweet and sour dressing by whisking together the wine vinegar, 1 tbsp honey and most of the lemon juice in a small bowl.

Gradually whisk in the extra virgin olive oil.

Stir in the thyme leaves and season with salt and pepper.

Taste for seasoning, adding more honey or lemon if needed.

Cut the courgettes on the diagonal into 1.5cm (Β½in) thick slices.

Tip the courgette slices into a large bowl, add the olive oil, salt and pepper, and toss well to coat.

Heat up a griddle pan over medium-high heat.

Cook the courgette slices for 3-4 minutes on each side until they are lightly browned and tender.

Arrange the slices of prosciutto and courgette on individual plates.
