1. In a non stick frying pan on heat 3 or 4 fry two eggs.
2. In the same pan fry the finely shredded onion and homemade mint sauce.
3. Once bread is lightly toasted spread mayonaise on it instaed of butter and place the egg first and then add the onion and mint sauce.
