Ingredients
- 2 Salmon Fillets skinned
- 4 tbsp dark soy sauce
- 1 tsp clear honey
- 2 tsp finely grated ginger
- 2 garlic clove. crushed
- Freshly ground black pepper
- Β½ Red Chilli. deseeded and finely sliced
- 4 spring onions. cut into 2cm lengths
- 42 ml vegetable stock
- 100g baby sweetcorn
- 100g Pak Choi. roughly chopped
- 125g thin rice noodles

Preheat the grill to med high. Place the salmon fillets in a shallow dish in single layer, mix together 3tbsp of the soy, 1 tsp ginger and the honey- pour over the fish and coat well. Season well with Black pepper.
Place the salmon under the grill and cook for 12-15mins or until cooked through.
While the salmon is cooking make the vegetable noodles. Heat a large non stick wok or frying pan over a high heat. Add the garlic, ginger, red chilli, spring onions, stock and soy sauce and fry gently for 5mins.
Turn the heat to high and add the baby sweetcorn and pak choi, stir fry for another 4mins. Prepare the dried noodles according to the instuctions and mix with the vegetables.
Remove and divide between 2 bowls and top each serving with a salmon fillet and serve.
