Cook couscous according to instructions on packet.

Halve peppers and place them skin upwards on a grill tray.

Brush with olive oil and sprinkle with salt.

Grill until skins are black.

Slice courgettes and place on grill tray.

Brush with olive oil and sprinkle with salt.

Grill on both sides until they start to turn brown.

When peppers are cold, skin them and chop into small pieces.

When courgettes are cold, chop them into small pieces.

Chop tomatoes and onion into small pieces.

Chop parsley.
