- 1 tbls baking powder
- Β½ tsp baking soda
- pinch salt
- 2 eggs
- ΒΌ cup melted butter
- 2 cup milk
- ΒΎ cup peeled & chopped apple

Description
When we were chief cooks and bottle washers, for MapleLeaf Middlewick Cottages, in Somerset, England, this recipe was a constant favourite.

Sift the dry ingredients.
Mix well the remaining ingredients and combine.
Melt goose fat, coconut oil, or lard in, preferably, a heavy cast iron pan.
Use a ladle to put the batter in the the hot pan and top with anything you like, fruit, nuts, seeds etc.
Cook until bubbles appear and flip to brown the other side.
This batter also works well for crepes but must be very thin.
Keep in mind that you can use just about anything for the liquid as long as there are eggs and butter⦠you could use yogurt, juices, sour cream.. anything!
This recipe originally came from my dearest sister-in-law, Jenny, in British Columbia.. over the years we have changed and modified it somewhat. We do hope she doesn't mind.
