- 2 Medium sized aubergines (aka eggplants)
- pinch black pepper
- Β½ teaspoon salt (per aubergine)
- Β½ cup leftover egg fried rice
- small handfull diced carrots and peas
- pinch dried oregano
- a few leaves parsley

The most useless recipe I have ever encountered, but I just had to share.

Halve the Aubergines, scoop out the centres to create a bowl. Sprinkle the salt on to the flesh and let stand for a half hour. Rinse away the excess salt (unless you hate your cardiovascular system), and place on a baking tray hollow side up. Fill with the leftover rice and diced carrots, and bake for 45 to 60 minutes, depending on how firm you like it. Dish it up with fresh chopped parsley, and place neatly on the compost heap. Tidy up, and either go out to the restaurant, or phone up for a takeaway. Don't blame me for this. It came from my brother-in-law, who apparently hates aubergines.
