Ingredients
- Β½ kilo Pork, cut in cubes
- 50ml olive oil
- 1 kilo tomatoes. skinned. deseeded and cut into chunks
- 2 tsp salt
- 1 bay leaf
- 1 large onion. finely chopped
- 2 cloves garlic- peeled and finely chopped
- 3 tablespoons concentrated tomato puree
- 1 chicken stock cube
- a little water

Yet another easy 'one pot' recipe with full flavour - double the ingredients for feeding more and serve with fresh, crusty bread (spread with thick butter optional)

In a large pot, fry the pork in the oil until browned.

Add the onion and garlic, tomatoes and purΓ©e, bay leaf, salt and stock cube, plus a little water.

Bring to the boil.

Reduce to a simmer until the pork is cooked and the tomatoes have reduced to a sauce, adding water if required (at least 20 minutes, but the longer time will make the meat more tender).
