Method

    1. Preheat the oven to 180C/160C fan/gas 4, and butter a 20cm cake tin at least 5cm deep.
    2. Break up the dark chocolate and gently melt this with the butter and sugar in a large bowl set over a pan containing a little simmering water. Leave this to cool a little, then beat in the eggs and extra yolk one at a time, continuing to beat until the mixture is glossy and amalgamated. Sift and fold in the flour, cocoa and baking powder, and then the mashed bananas. Spoon the mixture into the prepared tin, smoothing the surface.
    3. Bake for 35 minutes or until a skewer inserted at the centre comes out almost clean, but not quite, with a little goo clinging. Run a knife around the edge and leave to cool.
    4. Serve for pudding in slices with whipped cream, banana chips and berries if wished. The cake will keep well in an airtight container for several days.

Chef's Tips

ALTERNATIVELY Just before serving, whip 300ml double cream and pile this on top, as in the picture. Decorate with banana chips and berries.
