First make a dressing by whisking together 3 tbsp sour cream, 3 tbsp rapeseed oil or nut oil and 1 tsp cider vinegar. Season with a pinch of sugar and a little sea salt.
Have ready 40g each of watercress and pea tops and 150g crumbled wensleydale cheese. Trim and slice 3 spring onions.
Halve, core and thinly slice 1 golden delicious apple. Mix the apple into the leaves, divide among 4 plates and drizzle over the dressing. Scatter the cheese over and around, followed by the spring onions.
