Description

Part pud, part cocktail - and guaranteed to pack a zesty punch.

Method

    1. Have ready 6 x 125ml-capacity cocktail or other glasses.
    2. Cut the gelatine into broad strips, place these in a bowl, cover with cold water and soak for 5 minutes, then drain. Place the sugar in a measuring jug and fill up to 320ml with boiling water, stirring to dissolve, then add the gelatine and stir until this too dissolves. Stir in the Cointreau, tequila and lime juice. If you wish, tint the mixture with a little food colouring.
    3. Place some caster sugar in a shallow bowl. Run a cut lime over the top of the rim of the glasses or bowls, then dip them in the sugar. Pour the jelly solution into the glasses. Leave to cool completely, then chill for 24 hours until set.
    4. Decorate each glass with a thin slice of lime before serving.

Chef's Tips

NOTE We used Supercook brand leaf gelatine. Alternatively, use 1 sachet of powdered gelatine (again, Supercook is good) and follow the packet instructions for dissolving. For other brands, check the advice on the pack for the gelatine-to-liquid ratio.
