Description

A zesty and refreshing version of a classic summer drink.

    You will need a large, heatproof mixing jug and large glass jug for serving. Prepare 1 tbsp roughly chopped fresh mint. Wash 4 unwaxed lemons and 2 limes. Peel off the zest as thinly as possible using a vegetable peeler, and squeeze the juice. Place the lemon and lime zest and juice in the heatproof jug with the mint and 100g caster sugar. Pour in 600ml boiling water from the kettle and stir gently to dissolve the sugar. Leave to cool completely. Strain into a serving jug and chill. To serve, dilute to taste with chilled mineral water (about 2 parts cordial to
    1 part water). Sweeten with more sugar if wished. Decorate with extra lemon and lime slices, mint leaves and ice cubes.
