Ingredients
- 900g good quality braising beef
- 1 large onion
- 2 garlic cloves
- 2 red chillies
- olive oil for frying
- 1tsp hot chilli powder
- Β½tsp ground coriander
- Β½tsp ground cinnamon
- 1tsp ground cumin
- Pinch dried oregano
- 2 x 400g tins chopped tomatoes
- 2tbsp tomato puree
- 20g dark chocolate chopped
- salt and freshly ground black pepper
- 2 x 400g tins red kidney beans
- vegetable or beef stock as necessary (see method)
- chopped coriander
- tortillas or tortillas chips
- grated cheese
- sour cream
- guacamole (see method)

1. Have ready a large ovenproof casserole, 3-4 litre capacity, with a tight-fitting lid. Preheat the oven to 150C/130C fan/300F/gas 2. Cut the beef into 1cm-2cm chunks. Peel and chop the onion and the garlic, deseed and chop the chillies.
2. In the casserole, brown the beef on the hob in a little oil in batches for 2-3 minutes and set aside. In a little more oil, gently cook the onion, garlic and chillies for 3 minutes, then stir in the chilli seasonings and cook for 2 minutes more.
3. Return the browned beef to the pot and combine and coat with the seasonings. Stir in the tinned tomatoes and the tomato purΓ©e and heat through. Stir in the chocolate. Season to taste, put on the lid firmly and place in the oven for 1 hour.
4. Meanwhile, rinse and drain the kidney beans. Stir these into the pot after the hour of cooking time, adding a little stock if necessary to keep the contents moist. Return to the oven and continue to cook for a further hour, or until the beef is tender.
5. Serve with all the trimmings including a bowl of guacamole.
6. FOR GUACAMOLE Finely chop 2 fresh green chillies and 2 cloves garlic. Finely slice 2 spring onions. Prepare 3 tbsp chopped fresh coriander. Place the flesh of 3 medium avocados in a bowl and mash roughly. Fold in the prepared ingredients one by one, then season with salt and squeezes of lime. Serve straight away.
