Method

    Melt the butter in a small saucepan and stir in the milk. Remove from the heat. Sift the flour and a pinch of salt into a bowl and stir in the yeast. Pour in the milk and butter mixture and mix to a soft dough. knead the dough on a clean work surface until soft and elastic.
    Place in a bowl and cover with a piece of oiled clingfilm. leave in a warm place until doubled in size. Preheat the oven to 180C/ gas 4.
    Knead the dough a few more times, then divide it in half. Work the Parmesan into one half and roll it out to a rectangle, about 28cm x 21cm (11in x 8in). Cut into 12 strips and roll each one into a long thin sausage shape. Transfer to an oiled baking sheet.
    Work the fennel seeds and rosemary into the remaining dough. Roll out and cut as before. Transfer to the baking sheet and scatter over some salt and pepper. Bake for 10-15 minutes, until golden.
    Cut the Parma ham slices in half, and wrap around the Parmesan grissini to serve.
