Ingredients
- 3 skinless chicken breasts
- 1 each red, yellow & green bell peppers
- 6-8 chestnut mushrooms
- 1 Onion
- 2 hot chillies
- 1 thumb size piece of fresh ginger. finely chopped
- 1 garlic clove
- 1 tsp each of fennel, cumin & coriander seed & szechuan peppercorns
- Β½ a lemon, juice only
- 2 table spoons good quality dark soy sauce
- 2 table spoons extra virgin olive oil
- 2 table spoons water
- 1 table spoon rice wine vinegar
- 1 handfull Chopped fresh coriander

Description
I came up with this recipe to use up a glut of peppers, onions, fresh coriander and chicken. This recipe is best cooked on the braai, (bbq). My hubby loves these!

Chop the chicken, peppers, onion and mushrooms into kebab sized chunks and set aside in a glass/ceramic bowl. Using a pestle and mortar grind spices into fine mix. Finely chop the chillies, garlic and ginger and mix well in a seperate dish with the oil, vinegar, water, spices, lemon juice and soy sauce and add to kebab pieces with the coriander and mix with hands, coating all the pieces well. Cover and marinate for a couple of hours. Thread kebab pieces onto oiled metal skewers and bbq for about 20 minutes until nicely chargrilled and cooked through. Can also be baked or grilled. Serve with pilau rice and salad. Yummy!
Chef's Tips
Keep mixing the kebab ingrediants in the marinade to ensure that it is all well covered, making sure you mix in the juice that collects at the bottom of the bowl.
These kebabs are also great cold with a spicy peri-peri dip or cooling yoghurt & cucumber raita. Vegetarians could use tofu, quorn or just the veggies.
