Low Calorie Fruit Skewers

These tropical fruit skewers make a wonderful pudding for a summer barbecue, or if the weather has turned, can be cooked just as well under the grill...


Prepare all the fruit and thread on to small bamboo or metal skewers.

If using bamboo skewers they need to be soaked for 30 minutes in water before you thread on the fruit. &#8232,&#8232,Put the Canderel into a small pan with the water and heat gently to dissolve.  Add the lime juice and zest and stir together. Brush the skewers then place on the barbecue or under the hot grill and turn ever minute until they are lightly caramelised on each side, continuing to brush with the glaze as they cook. 

Serve with a dip of low fat natural yoghurt.
