Ingredients
- 16 slices white bread with crusts removed
- 8 slices back bacon or ham
- 8 slices cheddar cheese
- 6 eggs
- Β½ tsp ground pepper
- 1 tsp dry mustard
- 1-2 tsp Worcester sauce
- ΒΌ cup finely chopped onion
- ΒΌ cup finely chopped peppers
- 3 cups milk
- 4oz butter
- 1 cup crushed cornflakes

My mum use to make this for breakfast everytime she had a house full of guests. I'm not a wife yet but it most certainly has saved me a few times!

In a large rectangular buttered baking dish place 8 peices of bread. Add the peices to cover base of dish entirely. Cover bread with slice of bacon (remove the rind) or ham. Lay cheese on top of bacon and then cover with remaining slices of bread to make it like a sandwich.
In a seperate bowl beat the eggs, milk, salt and pepper. To the egg mixture add the dry mustard, onion, green peppers and worcestershire suace and stir.
Pour this mixture over the sandwich ensuring all the bread is covered. Leave to stand overnight in the fridge.
When ready to bake, pre-heat the oven to 190c. Melt the butter and pour over the top of the sandwich. Then cover with crushed cornfakes. Bake uncover for an hour. Stand for 10 minutes before serving.
