Method

    1. Heat up ypour oven to 180C/160C fan/ gas 4.

    2. Blend together really thoroughly the butter and sugar until you achieve a light, fluffy and pale mixture.

    3. Now beat up the eggs in a separate bowl and slowly fold in the beaten egg. You will find that if you alternate a bit of the egg mixture with a little flour, stirring all the time, you will avoid the mix curdling.

    4. Finally, stir through the vanilla extract and milk

    5. Using a 12 hole muffin tin, prepare with paper cases and then divide the mixture between them.

    6. Bake for 15-20 minutes until golden. Use a fork to test by sticking it into one of the cakes. If it comes out clean then the cakes are cooked.

    7. Now take the cakes out of the oven and allow to cool thoroughly.

    For the frosting:
    8. Beat the butter with a spoon or spatular until smooth. Now slowly sift in the icing sugar, stirring regularly.

    9. Add the vanilla extract and milk and mix well together until the frosting is light and creamy.

    10. Use food colouring of your choice to achieve different colours of icing. Simply stir in a few drops at a time untill the depth of colour you are looking for is achieved.

    11. Now spoon or pipe the icing onto your cupcakes and finish with your chosen decorations.

    12.Finally, allow the icing set for at least 30 minutes.
