My mum is a brilliant pastry chefette and this is her recipe, it is melt in your mouth pastry, amazing!

Method

    Rub fats and flour together until it resembles breadcrumbs in a food processor or mixer or by hand.

    Then add sugar, mix with beaten egg and enough water to form a dough.

    Use cornflour for rolling out as this is lighter than flour.

    Make whatever pies you like with it, brush tops with egg and sprinkle with some more sugar, then bake.

Chef's Tips

This amount of pastry will make two plate sized pies, take out sugar and add pinch of salt when making savoury pies.
