Great soup recipe, which really fills you up but is very healthy and low in fat.

Fry the onion in the olive oil, add the peeled and chopped butternut squash. Fry over a medium heat for a couple of minutes. Add the tin of chopped tomatoes and the vegetable stock. Leave to simmer until the butternut squash is soft enough to puree with a blender. Puree everything until smooth, then add the tin of mixed beans in tomatoe sauce. Season and add any spices or herbs as desired.
