A lemony vegetarian curry

Method

    1 - Gently fry the onions, taking care not to over cook, after a few minutes, add the garlic. When this has softened, add the chana masala curry powder (Note - this is available in most large supermarkets now).

    2- Add your lemons & tomatoes to the pan, make sure you have removed all pips from the lemon. If unwaxed lemons are not available, give your lemon a good scrub under hot water to remove as much was as possible.

    3- Add you chickpeas to the pan and slowly add some water a little at a time. You want your dish to be quite dry, but may need to stop the dish sticking.

    4 - Lower the heat and allow to simmer for a few minutes until the tomatoes have softened.

    Done! This is lovely served with plain rice or some homemade chapati. You can also add some spinach if you have it available. It would just need 2 mins towards end of cooking to wilt down.

looks great! I make the same type of curry using apinch of cumin (this thing is strong!),paprika or chilli. What sort of spices do you get with that spice mix? I've never seen it.

This sounds delicious. I love chickpeas but often run out of ideas for them, I'll give this a try tonight.
