Easy, tasty dish - great for those on a budget

Method

    1 - Bake the potatoes at gas mark 6 for 1 1/4 - 1 1/2 hrs.

    2 - Cut the cooked potatoes in half, scoop out the flesh and place in a bowl. Mash the potato with all the other ingredients, saving a little cheese.

    3 - Fill the potatoes with the mash, sprinkling with the remaining cheese.

    4 - Put back in the oven for around 15 minutes or until they are starting to crisp.

    VARIATION: You can also make a hollow in the middle and add a raw egg, bake as above for a more substantial filling.

    Top with chopped chives if using.

bake beans bottom the potatoes skin, then potatoes mash on top with lots of cheese....or mixed fried leek with mash potatoes with lots of cheese,,, yummy
