- chicken or veg stock
- dried or fresh basil
- olive oil

A very tasty healthy soup, low in fat easy and quick to make and packed full of vitamins.

Quarter the tomatoes, peppers and onion and put in a roasting tin with the whole garlic cloves. Pour olive oil over the veg and sprinkle with sugar and basil, give them a toss to ensure they are all coated.
Roast in oven (200 deg) for 30 - 35 mins untill tender.
Add the roasted veg to a can of chopped tomatoes and blend untill smooth, add stock to the preferred consistancy. Season to taste.
