PreHeat Oven To 180 Degree's
1) Slice the Onion and Red Pepper and place on lightly greased tray in the oven until they are starting to turn in colour.
2) Transfer to a pan and place on a medium heat. Add the crushed clove of garlic to the pan and allow to fry for 1 minuite.
3) Add the tin of tomatoes and then increase the heat slightly and then stir, bring to the boil and then reduce the heat to a simmer adding the water and stock cubes.
4) Blend all the ingrediants until smooth and there is no lumps.
5) Add the Dried Basil to the soup and allow to simmer for 5-10 mins before you serve.
