Preheat oven to gas 6, grease a baking tray.
Pour buttermilk into a jug and whisk in the egg, if you have not got any buttermilk use normal milk and add a tablespoon of lemon juice and leave to stand for 10 mins.
Sieve both the flours salt and baking powder into a bowl add the sugar mix together.Make a well in centre of flour and pour in milk egg mix a bit at a time you might not need it all, just use enough so that it is all combined into a dough turn out onto a well floured board or worktop and gently coat with the flour until you get a workable dough,put into a freezer bag and place in fridge for at least twenty mins, i never ever roll out scone dough take out of fridge place on floured worktop and just flatten slightly with your hand make sure the dough is quite thick dip your cutter in some flour and cut out scones, place on baking tray and brush with left over milk mix place in centre of oven for 15 to twenty mins or until just golden on top, another way to test these scones are done is a bit like bread if you tap the bottom it should sound hollow.
