Description

There's something undeniably comforting about freshly baked tea scones, perfect for elevating your afternoon break. Method

    Preheat oven to 200 C.

    Sieve flour, salt and baking powder into a large bowl.

    Rub in margarine until it looks like fine breadcrumbs.

    Stir in sugar.

    Beat the egg and milk together in a small bowl.

    Add this to the mixture, keeping back a little for glazing.

    Mix to a soft dough, adding more milk if necessary.

    Knead lightly on a floured board until smooth.

    Roll out to at least 1.5 cm in thickness.

    Cut into rounds.

    Place on a greased baking tray and brush with egg and milk.

    Bake at 200 C for about 15 minutes.

    Cool on a wire rack.

I tried these again and added the milk mixture slowly what a difference - Very nice scones 5*

No I didn't roll too thin. I think I probably added too much egg mixture and because of that overcompensated with the flour. The scones didn't taste too bad, they just didn't rise at all :))

If they looked like biscuits then maybe you rolled it too thin? I do that sometimes... :)

I didn't add it all, but I think I must have added too much. They did come out hard in the end and looked more like biscuits. Ah, well, I'll know next time.

Oops. Did you add all of the egg mixture? You only need to add enough to make a dough

I'm not quite sure what went wrong with mine. I followed the recipe and measured everything, but the mixture was like glue and stuck to my hands so much I couldn't get it on to the pastry board to roll it out. In the end I added so much flour that they will probably come out rock hard. Cooking them at the moment so will update ...
