Ingredients
- 4 chicken breasts (skin on and part-boned if possible)
- 1 Grated zest and juice of an orange
- 1 tablespoon clear honey
- 1 tablespoon olive oil
- 2 garlic cloves (chopped)
- 1 teasppon dried oregano
- 1tablespoon dark soy sauce

Description
An easy to make supper dish. Serve with potatoes of any sort, pasta or rice.

1. Pre-heat the oven to fan 170c/conventional 190c/gas 5. Put the chicken breasts, skin side up, in one layer in a shallow oven-proof dish. Put all the remaining ingredients in a bowl and warm through in the microwave (or a small pan) for 1 minute. Stir to mix everything together and pour over the chicken.
2. Cook in oven (uncovered) for about 35-40 minutes basting every ten minutes or so. Leave to stand for 5 minutes before serving with potatoes and vegetables of your choice.
A family hit! Didn't have an orange handy so subsituted it with marmelade/orange juice which worked out just fine, making it probably a wee bit more sticky than the original recipe. I also reduced the juices left over from the chicken for ten minutes, adding a splash more OJ, which made a great sauce.
