Ingredients
- 4 Tbs Hellmans mayonnaise
- 2 Tbs Heinz salad cream
- 1 Tbs lemon juice
- 1 Tbs tomato puree (or ketchup)
- 1 Tsp Tabasco sauce (or to taste)
- 2 Little Gem lettuces
- 1 ruby grapefruit
- 1 large can best quality tuna chunks
- paprika or cayenne pepper

Description
The recipe works just as well with prawns and the grapefruit gives it a very special tang. I made this version for my brother in law, as he can't stand prawns.

Shred the lettuce and divide into 4 prawn cocktails glasses. Mix together the sauce ingredients (you can increase or decrease the amount of Tabasco according to taste, but its best with a bit of a 'zing').
Peel the grapefruit, then remove the segments, leaving behind the dividing membranes. Chop the flesh into bite sized pieces.
Drain the tuna chunks and break them up slightly to a similar size to the grapefruit pieces.
Mix the tuna and grapefruit gently into the sauce, then divide the mixture equally between the 4 cocktail glasses.
Sprinkle a little cayenne pepper or paprika on top.
Serve with thinly sliced brown bread and butter.
Chef's Tips
If you leave out the grapefruit and mash the tuna to a smooth paste with the sauce, it makes a very good sandwich filling.
