- 1 large butter beans tin
- teaspoon chilli flakes
- ยฝ pack feta chees
- 2 tbl spoons olive oil
- knob butter
- to taste salt and pepper
- handfull/chopped fresh mint

This has a bit of a greek feel to it, but not sure if they would add the chilli, the combo of mint, feta and chillis is just amazing, and the butter beand fill you up!

Crush the garlic in a pestle and mortar with some salt to a paste. Add this to a cold pan with the oil and butter. Soften on a medium heat for about 5 mins until golden brown. Add the chilli and cook for another couple of minutes, then add the beans for 2 mintes and finally the prawns just to heat through for about another minute. Take the pan off the heat and add in the feta in roughly chopped cubes, as well as the mint. Stir to infuse all the flavours and serve on warm plates with some crusty bread. Drizzle with some good olive oil and season before serving.
My husband and I had this for our evening meal last night and we really enjoyed it.
