Description

Wonderful winter warmer! The stuff that cosy nights in are made of! It takes a couple of hours of bubbling away, but it's a hassle-free dish to cook. Even better next day reheated!

Method

    1. Add a tablespoon of oil to a large pan. Cook the sausages until browned all over. Once cooked, remove from the pan and allow to cool slightly, then, slice into pieces.
    2. Add to the pan, the onion, half of the potato, carrot, parsnip, turnip and add enough water to come just above the vegetables.
    3. Bring to the boil, then reduce the heat and simmer for one hour, topping up with boiling water as necessary.
    4. After one hour, add an Oxo cube, the sausage pieces and the remaining vegetables. Top up with boiling water to ensure the mixture is covered. Bring to the boil, reduce heat, and simmer for one hour.
    5. Season with freshly ground pepper and salt and serve in large bowls with fresh bread. You may garnish with a little freshly chopped parsley if you so desire.
