- 900gms / 2lb Pure pork sausages
- ยฝ cup flour seasoned with salt and pepper
- 450gms / 1lb bacon rashers
- A little oil for frying
- 2 cloves garlic
- 4 large potatoes
- 2 large onions
- 2 carrots thickly sliced
- l bunch of herbs parsley sage rosemary thyme
- Cider to cover
- Chopped parsley

A hearty, traditional,simple but sensational dish made from easy-to-come-by ingredients that will impress anyone you serve it to.

Dip sausages into seasoned flour and fry lightly until brown in oil. Remove and set aside. Saute onions and garlic in oil until soft.
Place sausages, onions, carrots, potatoes and bacon in large pot or pan with a close-fitting lid.
Insert the bunch of herbs and cover with cider.
Cook over moderate / low heat for about an hour and a half. Do not let boil if possible.
Garnish with parsley and serve in deep dishes, garnished with parsley.
Serve with soda bread and wash down with Guinness.
