Ingredients
- 3 Large eggs
- 150g Caster sugar
- 200g Plain white flour sifted
- 150ml Milk
- Β½ Grated zest of lemon
- 1 heaped tsp Baking powder sifted
- 60g Butter cut into small pieces - plus extra for greasing
- 3 tbs Stale breadcrumbs
- 1kg Dessert apples peeled and thinly sliced
- 2tbs Granulated or light brown sugar

Description
This is an absolute classic from an Italian family's repertoire of simple cakes. It's also excellent made with pears, plums, cherries, apricots or peaches.

1. Pre heat the oven to gas mark 4, 350 F (180 C).
2. Beat the eggs until they're light and fluffy, adding the sugar gradually, then fold in the flour, milk, lemon zest and baking powder. The mixture should be quite liquid.
3. Butter a 25 cm cake tine thoroughly, then dust with the breadcrumbs. Turn the tin upside down to remove all the loose breadcrumbs and throw them away.
4. Add half the sliced apples to the cake mixture and stir thoroughly. Pour the cake mixture into the tin, arrange the remaining sliced apples on the top.
5. Dot with butter, sprinkle with the sugar and bake in the oven for 55 minutes.
6. Once it's completely cool, remove it from the tin and serve!
I made this cake today, it was absolutely delicious! The apples make it incredibly moist and it isn't too sweet at all. I'd definitely recommend this recipe!
