I love the spicy hot taste, specially if you put some of the pork with fried Mexican beans and avocado in a bun, to make a real Mexican torta!

Cook the chiles in boiling water till they are completely rehidrated and soft, about 30 min. Then take out the chiles and open them and take out all the seeds and the stalks, put chiles in a blender along with 3 of the garlic cloves, the onion and salt. Also add just the right amount of the water you boiled the chiles in, so that the blender works just fine. Blend till a paste is formed. Meanwhile put the peppercorns, the remaining garlic cloves and another pinch of coarse salt in a mortar and make a paste, then make several holes in the meat with a knife and put this paste inside each one. Then seal the pork in a very hot pan or in the pressure cooker you're also going to cook it. Add the chile paste and the orange juice in the pressure
cooker an cook for about an hour, or until the meat separates very easily.
Chef's Tips
This is great for making "tortas" along with some avocado slices and some Mexican fried beans. Just prepare them right before you eat them, cause the bread becomes soggy very quickly.
