- 10 Chicken breasts
- 4 tsps Chicken seasoning
- 4 tsps Dried mixed herbs
- 4 tsps Jamaican jerk spices/seasoning
- 2 tsps Ground black pepper
- 2 Onions (large & chopped)
- 3 Garlic cloves (chopped)
- 1 290g jar of rogan josh curry paste
- 2 400g tins of chopped tomatoes
- 1 540g large jar of korma sauce
- 15 Mushrooms (sliced)
- 1 large pack Salted peanuts
- 1 340g jar of peanut butter

Great dish for a party - it's yummy. The recipe came from a friend from Zambia.

1. In a large pan place the chicken chunks with two pints of water. Add chicken seasoning, herbs, spices and pepper and bring to boil.
2. Continue to cook the chicken and reduce the liquid by at least half its original volume.
3. In another pan heat some olive oil. Add the onion and garlic and cook over a gentle heat for 10 minutes so that the onions and garlic are soft but not coloured.
4. Add the curry paste to the onion and the tins of tomatoes and cook for two minutes.
5. Add tomato, onion mixture to the chicken and mix in the jar of korma sauce. Add the chopped mushrooms and continue to cook for a further 10 to 15 minutes.
6. Slowly add teaspoons of the peanut butter to the sauce ensuring the peanut better melts into the sauce before adding another spoonful. The sauce will thicken as the peanut butter is added. If the sauce gets too thick add a little water to the pan. Once all the peanut butter is added to the pot serve the nutty chicken with rice.
