- 3oz raisins
- 3oz currants
- 3oz glace cherries(washed,dried &halved)
- 2oz mixed peel(washed&dried)
- 8fl oz apple-juice
- 2oz toasted chopped hazelnuts
- 2pieces stem ginger(washed,dried&chopped)
- finely grated rind of 1 lemon
- 4fl oz milk
- 2fl oz sunflower oil
- 8oz wholemeal self-raising flour
- 2 tsp mixed spice
- 3 tbsp brandy or dark rum

Soak the fruits in the apple-juice overnight. Pre-heat the
oven to gas mark 2,grease and double line a 7in square cake tin with greaseproof paper.Put the fruit into a large bowl
add the nuts,ginger and lemon rind to the fruit stir in the milk & oil.Sieve the flour& spice into another bowl then add to the fruit mix with the brandy or rum,mix together
thoroughly.Spoon the mix into the prepared tin wrap a
double sheet of brown paper round the tin so the cake don't
burn.Cook for 11/2 hours until cake is golden brown and
firm to the touch,turn out onto cake cooling tray to get
completely cold.
