Description

A fantastic alternative to traditional coleslaw! I love to eat this with cold meats such as turkey or ham, it goes well in the summer with quiches and all sorts of pies etc too.

Method

    Finely slice and chop the red onion and cabbage.
    Grate the carrot and beetroot.
    In a large bowl, combine all ingredients.
    Chill and serve.

I meant to say, I steep my dried cranberries in a fruit flavoured tea, then drain and cool before adding them to the mixture.
