SponsoredOrigin Pinot Grigio Organic
The nation's favourite tipple in an organic bundle. A great value wine,Β from Italy's ever popular Pinot Grigio grape. This wine is perfectly balanced with juicy pear and peach notes and soft floral aromas
Description
don't ask me why its called what it is. It has nothing to do with NY! I make this now and again and its a nice recipe, looks really complex but so long as you're organised its ok
Method
-
1
Finely chop some garlic
Slice some garlic
Slice the mushrooms
Grate the different cheeses and mix together
In a small pan put the passata, a good glug of oil, some sliced garlic. salt, pepper & the herbs. Put it on a low heat and leave it uncovered to reduce down to make a thick tomato sauce. This will take at least an hour.
Lay the bacon out on a grill rack and put it in the oven on a low heat to dry out and go crispy
In a large frying pan heat some oil and melt some butter on a medium heat, throw in the sliced mushrooms and and some finely chopped garlic and fry them with a few herbs until you have some nicely done garlic mushrooms, take these out of the pan and leave them somewhere warm
Give the pan a quick wipe down and then add a touch more oil and fry the chicken breasts until they are completely cooked through
on plates start with some mushrooms, put the chicken on top, spoon some sauce over that, add the bacon on top of that, cover the whole thing with cheese and put under the grill until the cheese is melted but not bubbling
Serve with wedges and corn
Chef's Tips
Don't feel you have to use 3 different cheeses. The ones I used give the best results i've had if you just have one then use one.
Similarly if you don't have passata just use a tin of chopped tomatoes
