Ingredients
- 2 Eggs (medium)
- 200ml sunflower oil
- 200g Soft light brown sugar
- 200g Plain flour
- 1 teaspoon Bicarb of soda
- 1 teaspoon Ground cinnamon
- Β½ teaspoon Ground ginger
- Β½ teaspoon Salt
- ΒΌ teaspoon vanilla extract
- 200g Carrots, grated
- 75g Chopped walnuts
- 400g Icing sugar
- 75g Unsalted butter
- 100g Cream cheese

The fellas at work always request this for birthdays & Christmas. My Daughter loves it too as it doesn't include raisins or sultanas

Preheat oven to 170c
Put the sugar, eggs & oil in a bowl & with a whisk beat until all is incorporated. Slowly add the flour, soda, 1 teaspoon of baking powder, cinnamon, ginger, salt and vanilla. Whisk until it's well mixed.
Stir in the grated carrots & walnuts until evenly mixed.
Pour into 2 (20cm) cake tins. Bake in the oven for approx 20-25mins - until golden brown, then leave to cool.
Frosting
Mix the icing sugar & butter together with a whisk at medium slow pace until well mixed. Add all the cream cheese in one go. When incorporated turn to medium high speed - continue until light & fluffy. Don't overbeat.
When the cakes are cold spread the frosting over the first one. Put the second one on top & cover with the frosting and around the sides. Finish with some walnuts and a dusting of cinnamon.
