Ingredients
- 6 Small aubergines
- 2 table spoons Oil
- Β½ tea spoon Black poppy seeds
- 1 tea spoon Whole cumin seeds
- ΒΌ tea spoon Salt
- ΒΎ tea spoon Turmeric powder
- ΒΎ tea spoon Red chilli powder
- 1 tea spoon Coriander-cumin powder
- 5 table spoons Powdered peanut powder
- 1 Crushed ginger
- 1 Tin of chopped tomatoes
- Gratted cheese
- Bunch of coriander leaves (washed and cut)

Slit the aubergines lenght wise is half and deep fry them in oil (in a fry pan).
In another pan, add 2 to 3 table spoons of oil, add black poppy seeds and whole cumin seeds.
After it splutters, add the tinned tomatoes, salt, turmeic powder, coriander and cumin powder.
Let it cook for 5 minutes on low heat and then add the powdered peanuts and coriander leaves.
Finally, add the aubergunes and let it cook on low heat for about 10 minutes.
DO NOT STIR TOO MUCH otherwise the aubergines can break.
Lay it out in a baking dish. Sprinkle grated cheese and place it wider a grill for 5 to 10 minutes before serving.
