- 4-8 tbsp Olive Oil

1. Mix mashed potatoes and corned beef.
2. Heat half the oil in a frying pan, then add the potatoe and beef mix, until thoroughly heated through.
3. In a separate frying pan, fry the eggs one at a time.
4. Serve corned beef hash in the centre of the plate, an egg on top of each serving, steamed vegetables to one side.
