Description

pieces of chicken cooked in yogurt and whole cumin-goes well as a starter or a main course

Method

  1. 1

    1. chop the onions into really small pieces
    2. cut the green chillies into half
    3. pour oil in a large non-stick pan and warm
    4. add the cumin seeds, cinamon and cloves and let it splutter (crackle)
    5 add the chopped onions and let it cook until the onions are dark brown[not just transparent]
    6. now add the chicken pieces and increase the heat and stirfry until the chicken turns brown
    7. add the crushed garlic and ginger and stir fry for a couple more mins
    8. add salt, turmeric, corriander-cumin powder.
    9.continue stirring and finally reduce the heat onto med and add the yogurt.
    10. cover the pan and let it cook for atleast 30-40 min until the chicken is cooked.

Thank you for a lovely recipe. A few tips for people.Firstly make sure your spices are good quality spices and the chicken is not from the supermarket. Chicken from the supermarket will contain lots of water making the dish runny.4. add the cumin seeds, cinamon and cloves and let it splutter (crackle) The heat needs to be really high and the smell should be as if the food is nearly burning. Also add in the pepper corns at this stage. 5 add the chopped onions and let it cook until the onions are dark brown[not just transparent]Make sure the heat is high, that is the only way to brown them. 6. now add the chicken pieces and increase the heat and stirfry until the chicken turns brownKeep the heat really high as well. That is the only way to get colour on the chicken. It needs to be pretty brown.If you use poor quality tumeric then you will not get colour. The only other way to add a bit of colour is a thread of saffron.All the way up into stage 8 the heat has to stay high otherwise you will get lots of water in the dish from the onions and chicken (particularly if you are using poor quality chicken)

Cloves are a dry spice, they look like tiny bits of twig that are removed after cooking, you can buy them in any supermarket with all the other herbs and spices. This sounds a great recipe, cant wait to try it :-)

I make this alot with our girt, and it never fails to satisfy her.. I like to add 300 ml of chicken stock to the foray and let it reduce to a nice sauce, then also add spinach and peas, then the yoghurt and coriander last..Mental curry, a lifelong favourite this one.Viva la cumin.

I made this last night, lovely ! Although mine did not look like the picture - i had quite alot of sauce/liquid with mine, it was not a dry looking dish like the image. Wow the kitchen aromas whilst cooking were fantastic. will certainly make again.

great fan of indian food made lots of different ones but this sounds like a lot of cumin seeds is it a bit overpowering 3/ 4 tbs

Made this recipe a few days ago and loved it. I changed the amount of cumin seeds from the amount stated to 2 desert spoons and also added a half a tin of chopped plum tomatoes (when I added the checken) that I had kicking around in the fridge. Finally I added some chopped fresh coriander 5 minutes before the end. Thanks for the recipe.
