- 250g Castor Sugar

- 1 tspn Honey (runny)

This recipe is dedicated to Kumari of www.skivillaroger.com who made these for us on our recent skiing holiday to Les Arcs. They have been VERY well received by my friends too!

Mix almonds, sugar, cinnamon and zest. In a separate bowl, whisk egg whites with the honey until stiff. Mix together the whisked egg whites and the almond mixture. The mix will be quite stiff. Use your hands to roll about 8 balls and flatten onto a baking sheet lined with greased greaseproof paper. Bake at 170 degrees until they just start to go brown - abut 10 minutes. They should still be soft. Leave to cool (if you can) and enjoy!
