Cinnamon Cookies
Ingredients
- 180g Plain flour
- Β½ tsp ground cinnamon
- ΒΌ tsp bicarbonate of soda
- 50g cold, cubed, unsalted butter
- 100g soft light brown sugar
- 2 tbsp golden syrup
- 1 medium egg, beaten

Description
These are an easy, quick and great tasting cookie to make for any occasion. They remind me of gingerbread, yet stay soft almost like sponge cookies.
Method

1) Pre-heat the oven to 190/375 gas mark 5, line a baking tray with parchment/grease proof paper
2) Sift the flour, spice and bicarbonate in a bowl and rub in the butter with you fingers until you have fine bread crumbs.
3) Stir in the sugar, and then add the syrup and egg with a spoon to bring together, and then using your hands gently kneed the dough to form a ball.
4) Roll the dough on a floured surface and using a cookie cutter make 12-14 rounds (depending on the thickness and size of cutter) and bake on the tray, in the centre of the oven for 9-10 minutes.
5) The cookies will be slightly soft, this is right, they harden up slightly when cooling. Leave to cool on the tray for 5 minutes or so then transfer to a wire wrack.
You can always make the dough ready for later or the next day, roll in cling film and place in the fridge until needed. This will last for a few days here and bakes for the same time more or less depending on the oven.
